Atlas Oyster House and Executive Chef Jason Hughes are proud to present The World is Your Oyster, featuring special guests: Grayson Bay Oyster Co. and Pensacola & Perdido Bays Estuary Program on Thursday, March 12, at 5:30 p.m.

Back by popular demand, Chef Hughes will once again present a family-style oyster dinner event and share stories of the Gulf, his favorite oyster recipes, and experiences. Pensacola & Perdido Bays Estuary Program and Grayson Bay Oyster Co. will also be on hand to speak about both of their missions, history, and to educate the importance and restoration of Pensacola and Perdido Bays Watersheds.

For the Table:
Atlas House Salad, bread service

Amuse Bouche:
Oysters and Bubbles
Half-shell Tidal Guides (Pensacola, FL) oysters, bowfin caviar, prosecco and pink peppercorn mignonette paired with Cremant D’Alsace Pierre Sparr Brut Rose

First Course:
Smoked Oyster Vol-au-Vent
Smoked Gulf coast oysters, applewood bacon and Portobello mushroom cream, puff pastry shell paired with Oyster City Mill Pond Blonde Ale

Second Course:
Bourbon-Brown Butter Grilled Oysters
Chargrilled New England oysters, bourbon-infused brown butter, cracked pepper, cilantro, lime zest paired with Oyster City Hooter Brown Ale

Third Course:
Potato-Wrapped Grouper
Gulf black grouper filet, rustic root vegetable ratatouille, seared oyster mushrooms, Gulf coast oyster cream sauce paired with J Vineyards Brut Cuvee

To Finish:
Chocolate Oyster
White and dark chocolate shell, dark chocolate mousse, strawberry-passionfruit “mignonette,” white chocolate pearls, pearled sugar
