Join us for our final installment of our Toast of the Coast Social Series, High on the Hog. The evening will feature a hands-on demonstration from a pro, with fantastic food and beverage pairings. This evening will present a wonderful opportunity for an up-close-and-personal, interactive experience with some of the best, all within a fun atmosphere on The Fish House Deck overlooking Pensacola Bay. The evening begins at 5:30 p.m. rain or shine! Event cost is $55 per person plus tax and gratuity. Thursday, June 26: High on the Hog – Sagra del Maiale!
Executive Chef Jason Hughes has teamed up with Executive Chef Ian Gillette of our sister restaurant, Angelena’s Ristorante Italiano, to present a family-style Italian pig roast to honor Sagra del Maiale, Festival of the Pig. The annual Italian festival, with roots in Northern Italy, celebrates pork and its dynamic use within traditional Italian dishes.
Both Chef Hughes and Chef Gillette will be on hand to present the tasting – discussing the slow-roast cooking process, including a discussion of the cuts of the pig, how to best prepare each, how to dress the beast for a full roast along with the step-by-step instructions for how to roast including information for your own roaster. Once the beast is complete, it will be offered up family-style and served with a selection of Italian sides including Italian bread service, Bagna Càuda broccolini, crispy fingerling potatoes tossed in lemon-garlic gremolata, served with Calabrian chili aioli. We will have three Italian cocktail pairings as part of the event along with Angelena’s Pastry Chef Kasper’s homemade limoncello tiramisu to end the evening!
