Wednesday, July 16th- Smoky Goodness
Simply prepared vegetables, fish, chicken, pork, beef, or lamb can easily be placed over smoke and fire to add fruitwood or hardwood nuances. Chef will discuss rubs and brines used to deliver the best flavors. Ultimately, foods taste better when you know what to look for and how to apply them for remarkable recipes. When we think of smoked foods, fish dip comes to mind, as does slow-smoked brisket, ribs, whole chickens or pork butt meat. Cooking flavorful recipes as we do judiciously at home on the smoker; whether it’s for every day cooking or for special occasions, everything just seems to taste better. Chef Miller will prepare four tastings featuring easy to replicate recipes!

Wednesday, August 20th- A Taste of Tradition

Chef Irv will walk you through customary tastings from somewhere south such as; Alabama, Texas, Mississippi, Louisiana and Florida. These traditional cooking-styles are proven and uncomplicated, culturally inspired from decades of Euro-American settlements.  The foods are celebrated in their locale and are created along the entire seaboard by using ingredients available locally.
