Atlas Oyster House and Executive Chef Jason Hughes are proud to present The World is Your Oyster: A Collaboration Dinner, featuring special guests: Grayson Bay Oyster Co. and Pensacola & Perdido Bays Estuary Program on Thursday, March 13, at 5:00 p.m.
Back by popular demand, Chef Hughes will once again present a family-style oyster dinner event and share stories of the Gulf, his favorite oyster recipes, and experiences. Pensacola & Perdido Bays Estuary Program and Grayson Bay Oyster Co. will also be on hand to speak about both of their missions, history, and to educate the importance and restoration of Pensacola and Perdido Bays Watersheds.

House-smoked Massachusetts oysters, Applewood bacon, roasted local corn, potatoes, fresh thyme, white wine cream, oyster crackers paired with Schramsberg Mirabelle Brut
Second Course:
Cajun Crawfish-Stuffed Oysters
Baked Gulf coast oysters, creamy crawfish etouffee, pecorino romano, gratin bread crumbs, crispy Louisiana crawfish tails Oyster City Mill Pond Blonde Ale
Third Course:
Fried Gulf coast oysters, warm flour tortillas, pepper jack, roasted corn & black bean relish, house pico de gallo, shaved cabbage, smoked jalapeno rouille, cumin sour cream, yellow rice paired with J Vineyards Cuvee
To Finish:
Chocolate Oyster
White & dark chocolate shell, dark chocolate mousse, strawberry-passionfruit “mignonette,” white chocolate pearls, pearled sugar
