Atlas Oyster House and Executive Chef Jason Hughes are proud to present The World is Your Oyster: A Collaboration Dinner, featuring special guest Executive Chef Irv Miller of Jackson’s Steakhouse on Tuesday, March 12, at 5:00 p.m.
Back by popular demand, Chef Hughes and Chef Miller have once again teamed up present a family-style oyster dinner event and share stories of the Gulf, their favorite oyster recipes, and their experiences. Pensacola & Perdido Bays Estuary Program and Grayson Bay Oyster Co. will also be on hand to speak about both of their missions, history, and to educate the importance and restoration of Pensacola and Perdido Bays Watersheds.

For the Table: Atlas House Salad, bread service
Amuse Bouche:
Pensacola oyster shooter featuring Tidal Guides oyster (East Bay, FL) and Atlas house-made Bloody Mary mix topped with PBR paired with Schramsberg Mirabelle Brut
First Course:
Big Bend little neck clams and oyster pan roast paired with Oyster City Tates Helles German-Style Lager
Second Course:
Cajun dark roux gumbo with Gulf coast oysters and local blue crab, served with Carolina gold rice and house-made cornbread crackers paired with Oyster City Mangrove Pale Ale
Third Course:
Chargrilled oysters with smoky Spanish paprika butter, Iberico cheese and Parma prosciutto paired with Chandon Garden Spritz
To Finish:
Chocolate oyster shell on a bed of pearled sugar filled with dark chocolate mousse, strawberry-passion fruit “mignonette,” and white chocolate pearls
