The Fish House, located on the water in downtown Pensacola, is once again preparing to celebrate the New Year.

The Fish House will be offering two special seating’s for the evening, in the main dining room, for our annual New Year’s Eve wine and food event. The seating’s will be held at 6 p.m. and 9 p.m. and will feature the culinary creations of Chef Jason Hughes with a fixed-price, five-course menu along with hand-selected wine pairings. The cost per person is $85 (excludes tax and gratuity) with complimentary favors included. As always, we will offer walk-in service all evening throughout the complex, serving from our standard menus.

Amuse Bouche

Southern Cheese & Charcuterie

House-made pimento cheese, chef’s selection of domestic cheeses, country ham, butter crackers, fresh fruit and accoutrements paired with Schramsberg Vineyards, Mirabelle Brut, Calistoga, California, NV

 

First Course – Choice of

Money Bags

Crispy wonton pouches stuffed with Thai-style pork, shrimp, shiitake mushroom, served with house-made sweet chili and hoisin peanut sauces

 

Brie en Croute

Puff pastry-wrapped triple cream brie served with Florida strawberries, spiced Renfroe pecans, fried rosemary and apple-cranberry glaze

Second Course

Beet & Citrus Salad

Roasted baby beets tossed in yuzu agrodolce, with lemon mascarpone, winter citrus, blackberry fluid gel, cocoa nibs and espresso walnut crumble

 

Fowl Gumbo

Cajun dark roux gumbo with duck confit, smoked chicken, roasted turkey and andouille sausage, served with Carolina Gold rice and house-made cornbread crackers

Third Course – Choice of

Crispy Pork Shank

Fried confit Duroc pork shank served with braised collard greens, colcannon potatoes and crispy Brussels sprouts, finished with pear mostarda and pomegranate glaze paired with Pork Shank: Panthera, Pinot Noir, Sonoma Coast, California 2020

Surf & Turf

Filet mignon topped with butter-poached Maine lobster and bearnaise sauce over a velvety cauliflower and parsnip puree with roasted broccolini and charred heirloom tomato paired with Hunt & Harvest, Merlot Rutherford, Napa Valley, California, 2016

Potato-Wrapped Crab-Stuffed Grouper

Gulf grouper stuffed with local blue crab and wrapped in crispy potato, served with rustic root vegetable ratatouille and finished with mushroom-caper butter paired with Stags Leap Winery, Chardonnay, Napa Valley, 2022

Naturally caramelized crustless cheesecake with chocolate orange pizzelle, Amarena cherries and roasted ginger pistachio dust
