We are excited to present our latest menu addition to the Atlas Oyster House, a sake menu, featuring a variety of sakes as well as sake-based cocktails. Sakes, Japanese in origin, are made from fermented rice. Sometimes referred to as “rice wine,” the brewing process is more akin to beer, converting starch to sugar for the fermentation process. According to Josh Goldman, Great Southern beverage manager, “We think that this menu is a perfect addition to Atlas, especially on Tuesday nights with our ongoing promotion of half-price sushi.”
With the exception of our hot carafe sake, all of our sakes are served chilled, and are ‘Special Premium’ grade, made from pure rice and water with no added distilled alcohol, and no preservatives, glutens or sulfites. Some of the new sakes include Ty-Ku Black, perhaps the most popular sake in America, with a rich texture exhibiting hints of natural sweetness with peach and vanilla on the nose; Tozai ‘Living Jewel’ — complex aromas and flavors of white grape, anise, and sweet rice; a medium body and slightly creamy texture followed by white pepper and fresh herbal notes; and Shirakabe Gura, our premium carafe sake option, which displays pear and nutmeg aromas with flavors of green apple.
New sake-based cocktails include The Rising Sun with Sake, strawberry puree, pineapple juice, fresh lime, and served on the rocks; The Bonsai, a green tea-infused sake, with fresh mint leaves, fresh lime, soda water, a touch of sugar, and served on the rocks; The Snow Monkey with sake, Stoli Sticki honey-flavored vodka, Godiva White Chocolate liqueur, banana liqueur, cream, and served in a martini glass; as well as an Atlas favorite, sake bombs made with our house-infused green tea sake dropped into Pensacola Bay Brewery DeSoto Raspberry Berliner Weisse.
