Asian Guacamole

Ingredients:

2 ripe Haas avocados, peeled, pitted, and diced
½ cup Maui or Vidalia onions, chopped
½ cup tomatoes, diced small
2 Tbsp. pickled ginger, minced
2 Tbsp. cilantro, chopped
1 tsp. garlic chili paste or Sriracha
½ tsp. sesame oil
1 tsp. sesame seeds, toasted
¼ cup scallions, sliced
2 limes, juice of

Instructions:

Combine all ingredients in a mixing bowl and blend with a fork until smooth. Serve immediately with freshly fried taro, vegetable, wonton, or tortilla chips. For next-day use, apply plastic wrap directly to the surface of the guacamole and refrigerate.
