Tahitian Pork Spare Ribs

Ingredients:

6 pounds baby back ribs

Tamarind Barbecue Sauce

2 cups Heinz ketchup
1 cup tamari or soy sauce
1 cup palm or brown sugar
1 cup tamarind juice
1 cup water
½ cup molasses
½ cup seasoned rice wine vinegar
½ cup hoisin sauce
¼ cup fresh ginger, grated
3 tablespoons red chili garlic sauce
1 tablespoon garlic, chopped fine

Instructions:

Combine all ingredients in a heavy-bottomed saucepot. Let simmer gently for 1 hour. If too thick add water to thin.

Basting “Mop” Sauce

1 fresh herb brush, made with fresh rosemary and thyme
1 cup pineapple juice or nectar
1 cup seasoned rice wine vinegar
2 lemons, juiced

Tahitian Dry Rub

1 teaspoon Chinese five-spice powder
1 teaspoon ground ginger
1 tablespoon coriander powder
2 tablespoons granulated garlic
2 tablespoons kosher salt or sea salt
2 tablespoons brown sugar
2 tablespoons black pepper
