¼ Stick Butter

1 Green Bell Pepper (Diced)
½ lb Ham Steak (Diced)
2 Garlic Cloves (Smashed and diced)
½ tsp Hot Sauce

Instructions:
Preheat oven to 350 degrees. In a large Cast Iron skillet, sear bacon on medium heat until crispy. Remove bacon and set aside. Melt butter and sauté onions, peppers, and garlic until soft. Add ham steak and deglaze with white wine. Let simmer until white wine is reduced by half. Reduce heat to low. In a mixing bowl, whisk eggs with salt, pepper, and hot sauce until frothy. Add egg mixture directly to pan and incorporate. Cook on low heat mixing constantly until mixture starts to stiffen evenly. Top with shredded cheese and place directly in the oven for approximately 15 min. Remove from oven. Allow pan to cool. Remove from pan and cut into wedges of six.
