12 ounces prime grade tuna, loin cut
¼ cup white sesame seeds, ground fine
¼ cup black sesame seeds, ground fine
Olive oil for searing
Sauce Ingredients
2 tablespoons soy sauce
3 tablespoons scallions, thin-cut on a bias
2 tablespoons cilantro, small chop
1 tablespoon crushed red chilies
1 tablespoon grated ginger
Side dish
½ cup sesame seaweed salad (per serving)
Instructions:
Preheat skillet to medium high, and then add oil. With a sharp slicing knife, shape tuna into square or rectangular lengths. Blend the ground sesame seeds and sprinkle onto a platter. Lightly coat the tuna evenly with the ground sesame mixture. Sear in the hot oil 2 minutes on each side. Combine sauce ingredients in a small mixing bowl. Thin-slice the tuna into 1- to 2-ounce portions and put into individual glasses or small dishes. Pour sauce over sliced tuna and serve with a side of seaweed salad.
