Olive all’ Ascolana

Ingredients:

24 large green olives, pitted 4 oz ground sausage
1 cup flour
2 eggs
2 cups fine bread crumbs Oil for frying

Instructions:

Drain the olives and pat dry with a paper towel. Push a small amount of sausage into the center
of the olives. Take a large pinch of the ground sausage and press it flat in the palm of your hand. Place the olive in the center and wrap the sausage around the olive so that it is completely covered with a thin layer of meat. Repeat until all the olives are stuffed and covered.

Set up 3 shallow bowls place the flour in one. Crack the eggs into the second beat the eggs with 1⁄2 water. Place the breadcrumbs in the third. Roll the olives in the flour, then dip into the beaten eggs and finally roll in the breadcrumbs. Repeat until all the olives are breaded.

Heat a shallow pan of oil to 350 ̊F. Carefully drop the olives into the oil and cook until golden brown, about 4 minutes. Drain on paper towels and serve immediately.
