Greek-style Meatballs

Ingredients:
For the meatballs and sauce
2 28-ounce cans tomato sauce
2 tablespoons extra virgin olive oil
1 large, fresh oregano sprig plus 1 teaspoon dried oregano leaf
¼ teaspoon crushed red pepper
1 tablespoon minced garlic
1 pound ground beef chuck
1 pound ground pork
3 tablespoons dry breadcrumbs
1 egg, lightly beaten
½ cup freshly grated Kasseri cheese
Kosher salt
Freshly ground black pepper
Instructions:
For the sauce: Preheat oven to 350°F. Place a small Dutch oven over medium-high heat; add the olive oil, fresh and dried oregano, crushed red pepper, and half the garlic. Stir well for 1 minute, add the tomato sauce, cover and cook on medium low for 1 hour — until the tomato sauce is very flavorful.
For the meatballs: In a large bowl, combine the ground chuck and ground pork with the remaining garlic and the breadcrumbs, egg, and grated cheese. Form mixture into golf-ball-size meatballs. Place on a baking tray and leave in the oven for 20 minutes. Then remove from oven, place meatballs into the sauce, and cook covered for an additional 20 minutes.
