Greek Meatballs
- 6
Ingredients:
2 28-ounce cans tomato sauce
2 tablespoons extra virgin olive oil
1 large, fresh oregano sprig plus 1 teaspoon dried oregano leaf
¼ teaspoon crushed red pepper
4 garlic cloves, minced
1 pound ground beef chuck
1 pound ground pork
3 tablespoons dry breadcrumbs
1 egg, lightly beaten
½ cup freshly grated Kasseri cheese
Kosher salt
Fresh-cracked black pepper
Instructions:
Preheat oven to 350 degrees.
Place a small Dutch oven over medium-high heat; add the olive oil, fresh and dried oregano, crushed red pepper, and half the garlic. Stir well for 1 minute, add the tomato sauce, cover and cook on medium low for 1 hour – until the tomato sauce is very flavorful.
In a large bowl, combine the ground chuck and ground pork with the remaining garlic and the breadcrumbs, egg, and grated cheese. Form mixture into golf-ball-size meatballs. Place on a baking tray and leave in the oven for 20 minutes. Then remove from oven, place meatballs into the sauce, and cook covered for an additional 20 minutes.
