Ingredients:

Easy Chocolate Cake

  • 2 cups sugar
  • 1¾ cups flour
  • ¾ cup cocoa
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoons salt
  • 2 eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

Mascarpone Chocolate Sauce

  • 6 ounces dark chocolate
  • 1¼ cups mascarpone cheese
  • 2 tablespoons orange-flavored liqueur (or any flavor to your liking)

Liqueur-Macerated Berries

  • 32 ounces berries (frozen or fresh)
  • ¼ cup sugar
  • ½ cup chocolate liqueur (or any flavor you desire)

Instructions:

Chocolate Cake
Heat oven to 300 degrees.
Sift together sugar, flour, cocoa, baking powder, baking soda, and salt. Set aside. Spray and flour a sheet pan. Set aside.

In a mixing bowl on medium speed, beat together eggs, milk, oil, and extract. Add sifted ingredients and beat on low until incorporated.Scrape down sides of bowl and on low speed add boiling water in a steady stream. Mix until just incorporated.  Pour into prepared pan.  Bake 30 minutes, or until a wooden pick comes out clean.
Remove from oven and cool for 10 minutes on rack. Cut around edges and invert onto cutting board. Cool completely and cut into desired shapes.

Can be refrigerated (well wrapped) up to a week.

Mascarpone Chocolate Sauce
Melt chocolate.Beat together cheese and liqueur. Beat the cheese mixture into the chocolate.
Place into a baggie, remove all the air, and close tight.  Refrigerate overnight.

Liqueur-Macerated Berries
Mix all the ingredients together, cover, and let sit in refrigerator at least 3 hours.
