2 slices country loaf or baguette
3 tablespoons unsalted butter
4 tablespoons mascarpone
3 tablespoons fresh raspberries, diced small
3 tablespoons fresh blueberries
3 tablespoons fresh blackberries cut in half if large
2 tablespoons granulated sugar
2 tablespoons St. Pete’s Blue Cheese, broken
Drizzle Wildflower Honey (East Hill Honey Co.)
Espresso Balsamic Vinegar (The Bodacious Olive)
Instructions:
Butter slices of bread and grill over coals. Generously smear mascarpone over top of grilled bread.
In a mixing bowl combine fresh berries, broken blue cheese, sugar, drizzle of honey and toss. Let sit for 10 minutes. Gently toss again, then spoon onto mascarpone grilled bread. Just before serving, drizzle with Espresso Balsamic Vinegar.
