The Fish House, located on the water in downtown Pensacola, is once again preparing to celebrate the New Year.

The Fish House will be offering two special seating’s for the evening, in the main dining room, for our annual New Year’s Eve wine and food event. The seating’s will be held at 6 p.m. and 9 p.m. and will feature the culinary creations of Chef Jason Hughes with a fixed-price, five-course menu along with hand-selected wine pairings. The cost per person is $85 (excludes tax and gratuity) with complimentary favors included. As always, we will offer walk-in service all evening throughout the complex, serving from our standard menus.

The featured menu for the New Year’s Eve Wine Dinner is as follows:

Amuse Bouche

Southern Cheese & Charcuterie

House-made pimento cheese, chef’s selection of domestic cheeses, country ham, house-made cornbread crackers, fresh fruit and accoutrements paired with Champagne Duval-Leroy, Champagne Grand Brut, France

 

First Course – Choice of

Burnt Brussels

Crispy Brussels sprouts, house-smoked bacon lardons, spiced walnuts tossed in a winter citrus glaze, shaved piave vecchio cheese

 

Oysters and Pearls

Champagne butter-roasted Gulf coast oysters topped with lobster-fennel champagne cream and white sturgeon caviar, served with garlic crostini

Both paired with Stag’s Leap Winery, Sauvignon Blanc, Napa Valley, 2022

Second Course

Italian Lentil Soup

Italian sausage, lentils and farro, simmered with winter root vegetables in a rich vegetable broth. Served with a warm rosemary biscuit

 

Crab Imperial Kale Caesar

Local lump crab ravigote over a salad of Romaine lettuce and Tuscan kale, tossed in roasted garlic Caesar dressing. Topped with house-made herb-garlic croutons, hearts of palm, crispy leeks and pecorino Romano

Both paired with Decoy Wines, Chardonnay Limited, Sonoma Coast, 2022

Third Course – Choice of

Duck and Foie Gras

Long Island duck breast and seared foie gras over kabocha puree, roasted acorn squash, garlicky local rainbow chard, caramelized Cipollini onions, pomegranate gastrique and hazelnut tuile paired with Sonoma Cutrer Vineyards, Pinot Noir, Russian River Valley, 2022

Blackened Redfish

Wild redfish filet over local field pea and Carolina Gold rice hoppin’ John, braised collard greens with smoked ham, sweet corn spoonbread, Creole choron paired with Frank Family Vineyards, Chardonnay Carneros, California, 2022

Wagyu Ribeye Cap Udon Bowl

Grilled Kuro wagyu ribeye cap steak over udon noodles in a rich bone broth with narutomaki, baby bok choy, roasted carrots, water chestnuts, scallion, drizzled with bone marrow soy glaze paired with DAOU Vineyards, Cabernet Sauvignon, Paso Robles, 2022

Torta Bertolina

Caramelized almond budino, crostoli, blood orange pomegranate glaze

 

Flourless Chocolate Cake

Chocolate mousse, matcha white chocolate crunch bar, roasted strawberries, vanilla bean whipped cream, spiced orange compote (GF)
