Charred Tomatillo Guacamole

Serves: 6

Ingredients:

8 ounces tomatillos, husked

3 ripe Hass avocados, pitted

2 tablespoons finely chopped yellow onion

1 seeded and minced jalapeño

3 tablespoons finely chopped cilantro

1 tablespoon fresh lime juice

Kosher salt and freshly ground black pepper to taste

Instructions:

Preheat grill to medium high. Place the tomatillos on the grill and char all over by turning frequently, 5–7 minutes. Remove and let cool. In a food processor with a cutting blade, pulse the charred tomatillos to a fine grind. Scoop out the avocado flesh with a spoon and place in a mixing bowl. Add onion, jalapeño, cilantro, and lime juice, and mash with a wooden spoon. Mix in the pureed charred tomatillos and blend well. Taste, and adjust seasoning with salt and pepper.
