Releases New Cookbook with Debut Signing Event


Jackson’s Steakhouse is proud to announce the release of our own Executive Chef Irv Miller’s second cookbook, Gulf Coast Oysters: Classic & Modern Recipes of a Southern Renaissance published by Spring House Press. Jackson’s will host an official launch party and book signing 2:00 – 4:00 p.m. Sunday, September 30, at Jackson’s, 400 South Palafox, Downtown, Pensacola, Florida. Come meet and greet with Chef Irv Miller at Jackson’s, where he will have the limited-edition hardback cookbooks available for purchase and signing. The event is free and open to the public.


Chef Miller has been working along the Florida Panhandle and writing about the foods of the Gulf Coast for over three decades. Miller has contributed numerous food columns in countless publications. Additionally, Chef Miller has appeared on many televised cooking shows and events, including all of the local affiliates, Bravo’s “Top Chef” Emeril’s Florida television episode “Viva Florida,” MSNBC’s “Morning Joe” and also hosted the PBS/WSRE Pensacola cooking show “Flavors of the Coast.”


Miller’s recipes are included in The Lodge Cast Iron Cookbook 2014, and he was selected to represent the state of Florida in the Great American Seafood Cook-Off 2012. Chef Miller has been a six-time performing chef for the James Beard Foundation and has served ten years as a founding member of the Pensacola Celebrity Chefs. Miller’s longtime commitment has been to the Florida Panhandle and Southern-inspired foods. Miller considers Florida Panhandle cuisine as the last great regional culinary secret of the state. For over 18 years Chef Miller’s cuisine has been featured at Jackson’s Steakhouse in Pensacola, where he serves as founding executive chef. Chef Miller debuted his first cookbook, Panhandle to Pan: Recipes and Stories from Florida’s New Redneck Riviera in 2015, and is proud to be rolling out his second cookbook, Gulf Coast Oysters: Classic & Modern Recipes for a Southern Renaissance featuring 216 pages highlighting oyster farms and farmers, and 70 personalized oyster recipes for both raw and cooked.


It’s been said Gulf Coast oysters have the cleanest taste of any oyster, “…it tastes of the sea and not much else, and for that reason they should be the oysters against which all others should be measured.” Gulf Coast Oysters: Classic & Modern Recipes of a Southern Renaissance is the latest cookbook from acclaimed and award-winning chef, Irv Miller. Gulf Coast Oysters is a joyful and thorough exploration of Gulf oyster culture that honors the many oyster classics of the Gulf foodways while also putting a fresh, modern spin on preparing “panhandle pearls.” The cookbook also focuses on preserving the Gulf’s cross-cultural, Southern traditions and a goal of creating new interest in approaching sustainable Gulf oyster practices for celebrating both the iconic natural set Gulf oyster and the new off-bottom farmed oyster. Gulf Coast Oysters Classic & Modern Recipes of a Southern Renaissance is a bountiful book of diverse Gulf oyster recipes, striking photography, and an engaging look at the culture surrounding the ancient mollusk’s place on the Gulf Coast.
