Chef James’ Whole Hog “Macelleria” at Angelena’s: A Demo and Dinner Event

If you’ve ever wanted to go into a macellaria, or butcher shop, in Italy, but didn’t have the chance, Chef James Briscione and Angelena’s will now bring the butcher shop to you. The dinner will be held in the Garden Room and will be offered on Wednesday, October 14th, at 6:00 p.m. You’ll watch and learn in ‘real time’ as Chef James transforms a half hog into your favorite cuts. Guests will sample each cut in a dish with Chef James ideal preparation. In addition, a featured WhistlePig PiggyBack Rye cocktail and wine will be included, as selected by Brooke Parkhurst, Wine Director. The menu for the evening is as follows:


Scallopine- breaded and pan-fried loin medallions

Tenderloin- marinated and grilled

Leg- housemade fennel and garlic sausage

Shoulder- slow-simmered calabrian pork ragu served with housemade pasta

Belly- classic Italian porchetta, seasoned, rolled and roasted
