If there was ever a time to celebrate tequila, it’s right this very second. Cinco de Mayo is quickly approaching and there’s no better way to celebrate than with a cocktail that is bursting with classic tequila flavors, organic fundamentals, and… George Clooney. Named for the Jalisco Highlands of Mexico where the 100% Blue Water Agave is grown in rich, organic clay soil, the Jalisco Collins is crafted with Clooney’s genius side project (which, according to my wonderful wife, has slated a place in her heart more tender than his dapperness in “Ocean’s Eleven”), Casamigos Tequila. “Our idea was to make the best-tasting, smoothest tequila around. So we did.” Now, I don’t know if it was Clooney’s flagrant confidence in his product, my vast determination to see him subpar in any aspect of his life, or sheer curiosity that originally drew me to try Casamigos, but it was the best tequila-related decision I’ve ever made. His small-batch, ultra-premium tequila is so crisp and clean that I was forced to come to terms with Clooney’s overall brilliance and the knowledge that my wife is, quite literally, always right. Casamigos’ flavor profile of citrus, vanilla and sweet agave with its long, smooth finish is the perfect foundation for any cocktail. So perfect, in fact, creating a spin on the classic Tom Collins was just one of many concoctions I waded through while conceptualizing this cocktail. The possibilities are boundless for the “truly special tequila” (Fox News), but I eventually settled on a build that wouldn’t distract the drinker from the sublime flavors of Casamigos, but enhance the experience and thrust the drinker into a state of tequila-divinity (yes — that exists!). In addition to this exceptional tequila, the Jalisco Collins features Luxardo Maraschino Liqueur, agave syrup, fresh-squeezed citrus, sparkling water, and is garnished with fresh, edible flowers from the Jackson’s garden, making for an experience that will truly blossom your taste buds. Ingredients:

Jalisco Collins

1 ½ oz. Casamigas Reposado Tequila

1 oz. Luxardo Maraschino Liqueur

¾ oz. fresh-squeezed Citrus

½ oz. agave syrup

sparkling water

 

Instructions:

Combine all ingredients (except for the soda water) in a mixing tin and shake with ice — strain into a tall glass over ice, then top with soda water and roll — garnish with fresh flowers (from our planters in front of the building).
