Ingredients:
- 2 yellow onions
- ¼ pound butter
- 1 ½ pounds green beans
- ½ pound applewood-smoked bacon (sliced)
- 1 cup chicken broth
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
Instructions:
Bring a large pot of water to a boil. Make an ice bath and place to the side. After water comes to a boil, add green beans and let cook for about 2 minutes. Remove from water and place in ice bath.
Heat a medium-size pan to medium heat and add butter. After butter has melted, add onions and cook without stirring for 10-15 minutes. Then stir occasionally, allowing onions to caramelize. Deglaze pan with a little of the
chicken broth. Remove from heat and let cool.
Heat a large sauté pan over medium to medium-high heat and add bacon. Cook bacon until it is almost crispy. Add green beans and onions. Cook for 3 minutes. Add chicken broth, salt, and pepper. Cook until chicken broth is reduced to almost nothing. Remove from heat and serve.
